How to make だし (Dashi)

だし is the foundation of Japanese cooking. The simplest version:

1. こんぶを みずに ひたす — Soak kombu in cold water
2. ゆっくり あたためる — Heat slowly
3. わかす まえに こんぶを とりだす — Remove kombu before it boils
4. かつおぶしを いれる — Add bonito flakes
5. こす — Strain

The result is a light, umami-rich stock used in soups, sauces, and simmered dishes.

Soy sauce types

Not all しょうゆ is the same:

• こいくちしょうゆ (濃口醤油) — dark soy sauce, the standard
• うすくちしょうゆ (薄口醤油) — light-colored soy sauce, saltier, used in Kansai cuisine
• たまりしょうゆ (たまり醤油) — thick, rich, good for sashimi
